Loaded Peanut Butter Cup Cookies

These loaded peanut butter cup cookies are delicious! They're super soft and a little bit chewy with a great peanut butter flavor. They also have yummy bits of mini chocolate chips throughout and are stuffed and topped with mini peanut butter cups! Yowzers! What's not to love?? These are my new favorite cookie. 
I love that these cookies are soft and moist. No crumbly, dry cookie here! The mini chocolate chips pair deliciously with the peanut butter cookie and since the chips are small they don't take away from the peanut butter flavor. The little peanut butter cups are melty and yummy and bring all the flavors together. This is just one scrumptious cookie!
I rolled up two or three mini peanut butter cups in each dough ball. Uh...Yum!

I rolled my cookies in sugar since I used unsweetened peanut butter. The sugar gives the cookies a nice sparkle and yummy crunch.
After they bake up, each hot cookie gets topped with mini peanut butter cups. 


Let the cookies cool if you can and then devour with milk.


I used Trader Joe's mini peanut butter cups. The chocolate is soft and works nicely with these.

Loaded Peanut Butter Cup Cookies
Ingredients
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, beaten
1 teaspoon vanilla extract
2 tablespoons milk
40 miniature chocolate covered peanut butter cups, unwrapped
3/4 cup mini chocolate chips


Directions
Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt and baking soda; set aside.

Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Stir in mini chips. Shape into 40 balls. If desired, press one or two (depending on size of your cups) mini peanut butter cups into each ball and re-roll. Place on an ungreased cookie sheet.

Bake at 375 degrees for about 8-9 minutes. Remove from oven and immediately press (lightly) a mini peanut butter cup into the tops of each cookie. Cool and remove from cookie sheet.
