Dad's Day Breakfast

For dad's day today, I made breakfast, but kept it simple and healthy.

Oatmeal with caramelized banana's
Basil Eggs
Hot coffee


For the Oatmeal:
I steamed the oatmeal in some milk and a tiny pinch of salt.
I stirred in some chopped almonds and drizzled it with honey.
I layered the top with banana slices and a sprinkle of brown sugar.
I finished it off by caramelizing it the oven, under the broiler.
For the eggs:
Very simple. I first cracked the eggs into a bowl and mixed them with a pinch of salt and cracked pepper. I cooked them over medium-low heat and stirred in some fresh cut basil at the end. Dee-lish.
After eating a nice, lite and healthy meal we headed off to the beach for a dip in the ocean.

Oatmeal is so versatile. I like it best mixed with butter & brown sugar then baked on top of fruit.

I'm not really a fan of warm banana's but, Jason liked it so that's all that matters.
