Cooking Club: May

Theme: Hawaiian Luau

And a Mai Tai and a Mango Smoothie. Hey, it's a mini vacation, right?

Now, to go along with all those tropical drinks...a luau-style buffet.

Polynesian Fried Rice
This yummy rice had bits of bacon, chives and eggs and was cooked in, dare I say it?, Butter! What's not too like?

Luau Ham and Glazed Pineapple Snacks *
The juicy chunks of ham had a great flavor from being grilled and I loved the salty/sweet combination with the caramelized pineapple. And what were they glazed with you ask?...
A mixture of tequila, lime juice and orange marmalade. And the secret ingredient? An agave worm.

The creamy butter sauce was delicious! And the crusted pieces of fish were tender and had a nice crunch. This would be good made with any kind of fish. The sauce might even pair well with steak! (think Benihana)
A tasty chicken and vegetable stir-fry served over fluffy white rice. Very Good! Loved all the tropical flavors.
Instead of the traditional chopped up chicken or pork, these lettuce wraps were served with delicious turkey meatballs and a yummy sweet and spicy sauce. The turkey meatballs and dipping sauce would be tasty to serve as an appetizer.

And for a sweet finish...

This cake was bursting with coconut flavor and had a delicious, fluffy frosting. This had a more sophisticated flavor from the homemade cream cheese buttercream frosting. I would make it again! 
This was excellent! The pineapple filling was creamy and delicious and the graham cracker curst was buttery and crunchy. Perfection!

* Glaze Recipe for the Ham and Pineapple Snacks:
1 jar Orange marmalade
2 limes (squeeze into mix)
1/2 cup mezcal (tequila)

What a fun party! The food was most excellent. Your cake was the bomb! Absolutely loved the frosting. I know who is going to make my birthday cake this year.
