Pumpkin Spice Cupcakes w/ Cinnamon Honey Frosting

I love fall baking. There's just something about being in my warm, cozy kitchen baking treats for my family and friends that makes me happy. I love all the delicious aromas that feel my home as I bake.

Lately, I've been on a pumpkin kick. My little girl requested cupcakes, so I choose these quick and easy pumpkin spice cupcakes. The cupcakes are super fluffy and moist and full of great pumpkin flavor. The honey cream cheese frosting is the perfect accompaniment. The frosting is slightly tangy with the perfect amount of sweetness and a wonderful flavor from the cinnamon and honey.

These were a hit with my family and friends!

Pumpkin Spice Cupcakes

Ingredients
1 package (18.25 oz.) spice cake mix
1 can (15 oz.) Pumpkin Puree
3 large eggs
1 teaspoon pumpkin pie spice
1/3 cup vegetable oil
1/3 cup water
Cinnamon Honey Frosting (recipe below)*

Directions
PREHEAT oven to 350° F. Paper-line 24 muffin cups (I got 20 cupcakes with this batter).

Blend cake mix, pumpkin, eggs, pumpkin pie spice, oil and water in large mixer bowl until moistened. Beat on medium speed for 2 minutes. Pour batter into prepared muffin cups, filling 3/4 full.

Bake for 18 to 23 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely. Spread cupcakes with frosting. Decorate with assorted sprinkles, if desired.
* Or 1 container (16 oz.) prepared cream cheese or vanilla frosting

Cinnamon Honey Cream Cheese Frosting
1 (8 ounce) package cream cheese, softened
1/4 cup butter, softened
2 3/4 cups confectioners' sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon honey

Beat the cream cheese and 1/4 butter with an electric mixer in a bowl until smooth. Beat in the confectioners' sugar a little at a time until incorporated. Add the vanilla extract, 1 teaspoon ground cinnamon and honey; beat until fluffy. 

Frost cooled cupcakes with the cream cheese icing.

These cupcakes bake up nice and fluffy and have that perfect dome top!
