Watermelon Citrus Cocktail

This is a super refreshing and tasty summer cocktail. I served it at a bbq and the guests just loved it! The  sweet watermelon paired with the tangy citrus juice is a delicious combination.


Watermelon Citrus Cocktail
10 cups watermelon pieces, about half a large watermelon rind removed
1 cup flavored vodka (I did vanilla)
1/3 cup fresh lime juice, from 3 limes
1/4 cup simple syrup (plain sugar works too)
Orange and Lemon wedges

Puree watermelon pieces and vodka in a blender until smooth (this may have to be done in batches).  Strain watermelon liquid into a large pitcher. Stir in lime juice and simple syrup. Squeeze in orange wedges and lemon wedges to taste. I used about 4-5 orange wedges and 2-3 lemon wedges. I also added orange, lemon and lime slices for decoration. The slices I did not squeeze the juice out of.

Refrigerate until well chilled, at least 3 hours. Stir mixture and serve in ice-filled glasses. Garnish with lime wedge or watermelon pieces.

* You can add more vodka if you really want to taste it or you could leave it out all together.

They were really good and I'm not a fan of watermelon. But, these were really tasty!
