Caramel Apple Sundaes


I was craving something sweet, but all I had was vanilla ice-cream. I also had some apples, so I decided to make ice cream sundaes. While I was at it, I also made some homemade salty caramel sauce. The sautéed apples and caramel were very quick to make and very delicious.


My quick Caramel Sauce:
4 T Butter
3/4 C Brown Sugar
1/4 C milk
pinch of salt


In a sauce pan, I melted the buttered then stirred in the brown sugar and milk. I only had 1% milk, so that's what I used (heavy cream would be ideal). I added a pinch of salt to cut the sweetness. I brought the mixture up to boil and continued to cook it, lowering the heat a bit, for about 5 minutes. I took it off the heat and let it cool slightly.

For the sautéed Apples:
I heated 2 T of butter in a skillet until melted and bubbly. I added two thinly sliced apples and tossed to coat. I didn't have any cinnamon, so I threw in a pinch of allspice, a pinch of ginger and a fresh grating of nutmeg. I also added about 1 tsp of sugar. I cooked and tossed the apples until they were tender but still had a bite. I stirred some of the caramel sauce into the apples, then served it hot over vanilla bean ice cream. I drizzled a little more caramel over the apples because you can never have enough caramel.
This dessert definitely hit the spot and it was so quick and easy!

That looks like ecstasy. When our apples come on, I am going to be eating that.
